lentil deliciousness...

I just wanted to share this healthy goodness!

TOMATO LENTIL SOUP
NOT YOUR MOTHER’S SLOW COOKER RECIPES FOR TWO

Cooker: 3 quart
LOW for 7-9 hours

1 Tbsp extra-virgin olive oil
2 oz pancetta, chopped
¾ C brown lentils, rinsed and picked over
1 small onion, finely chopped
1 carrot, diced
1 stalk celery, diced
4 C water
2 Tbsp tomato paste
½ bay leaf
½ tsp crumbled thyme or marjoram
1 tsp salt
¼ tsp freshly ground black pepper
1-2 Tbsp red wine vinegar (or more)

1. In a medium-size skillet, heat the oil over medium heat. Add the pancetta and cook until translucent, 5 minutes.
2. Place the lentils, onion, carrot, celery, water, tomato paste, bay leaf, and thyme into the slow cooker. Use a heat-resistant rubber spatula to scrape the pancetta into the crock; stir to combine. Cover and cook on LOW for 7-9 hours, until the lentils are completely soft.
3. Season the soup with the salt and pepper, then add the vinegar, starting with 1 Tbsp and adding more if desired. Serve hot.

smith rock for the weekend

so i've heard about smith rock but have yet to go there...
till tomorrow after work


i won't say how long it's been since i climbed last
but harness,
blown-out wabi-sabi thrift store shoes,
chalk bag,
ATC belay device
and beaners are packed
fun friends and new friends to meet
i can't wait for the sun
to continually grace my presence
for the next few days
cheers to the east side of the state
where the sun shines!

in the break between the dinner and reception
mom, dad and i took a lil tour of our own of campus
all the buildings are now built
unlike the years i was there
when there was always a new hole on campus
mom being artistic
blow away hair
was nice to be with mom & dad
post-reception:
laughs at a relatives house
and great stories to hear
always a guarantee at rod & sue's

graduation cap & diapers

recap from my utah trip...
two weeks ago
cousin noel graduates with
his masters in mechanical engineering
although totally happy for him...
i wouldn't mind EVER going
to a college graduation again
they're so boring! and long!
at least mine had an acoustic rendition of
Imagine...
and i thought my dean might
have been drunk or stoned
arriving early and right before graduation was
Cooper!
He's adorable!
and Audrey was walking about
like she didn't have a baby two days before...
naturally may i add...
i'd probably still be in bed
sayin' you can come see me... precious!
so many of the cousins covet
Cooper's name...
but in reality Noel won.
he got married first
and had the first great grandchild...
And Cooper seems fitting to such a cute baby...
who knows what the rest "could have been Coopers"
might have looked like...

zyla graced the world yesterday

i've been waiting for her
she has wonderful new parents
i, myself am in the mindset
and action mode
of new-beginnings
and have had my eyes/heart opened
and reminded of grace, forgiveness, love, peace
& gratitude vs. entitlement
been reading and pondering a little...

on the road to k falls

on my way...to...for those that you that don't know...
a great offer at pilot gas stations...


after my meeting they had
their "third thursday"
k falls people even join in zamba in the streets...
who knew they had a market for boutique shops
i love all i can afford is a card on sale
i did find these cute cups at an antique store
but it was a want...
not a need
i am attracted to turquoise
right now though

i did find a great thrift store
and got a shirt
i realized once again that
my favorite clothes
have been good hand-me-downs
for quite a few years


then on the drive back


another way home...
seemed like a good idea
the light snow magically dusted the trees
it was so beautiful...
until the white out...
then a new road

with good old retro signs

and a sign that made me think of karen
i want the little one on the right
to be her logo...
